Mora's ProGrip straight wide boning knife is a trade-standard tool for breaking down deer, sheep, pig and larger game in the larder. The 6-inch blade is ground from Sandvik 12C27 Swedish stainless knife steel, hardened by deep refrigeration at minus 80 degrees to reach 58 RC, so it takes a keen edge and holds it through a long butchery session. The slightly wider blade section gives you the body to work around joints and through the heavy connective tissue you meet when jointing a carcass, while the stiff grind delivers the control and leverage that boning demands. Mora's double-moulded rubber handle has an etched structure that keeps a secure grip in wet and bloody conditions, where a smooth handle would slip. Stainless steel and the sealed handle make the knife straightforward to wash down and keep clean between jobs.
