      Four items that between them cover preparing a skull properly.

      The Akah roe buck cutting jig holds the skull square while you cut, and comes with the saw. A trophy cut freehand is a trophy cut crooked, and on a head that may be measured the cut has to be right first time — there is no second attempt.

      The Akah trophy boiling device, the 40cm Matfer Bourgeat stainless pot and the 3kW Buffalo induction hob make up the boiling-out setup. Do this outside or in the larder, never in a kitchen you eat in.

      Simmer rather than boil hard, and do not overcook. Prolonged hard boiling breaks down the bone, loosens teeth and separates the nasal bones, and none of that can be undone. Lift the head out, clean it back, and return it if it needs longer. Degrease properly afterwards — grease left in the bone yellows over the following year — and whiten with peroxide rather than household bleach, which keeps working on the bone long after you have finished with it.
