A pig sticking knife is a long, narrow, rigid blade made for one job in the larder. It is not a field-dressing or caping knife and a stalker looking for a gralloching blade wants something shorter and broader.
The law on carrying a knife. It is an offence in the UK to have a knife in a public place without good reason. Work, sport and a genuine purpose are good reasons; having it in the vehicle on the way home from the hill generally is not, unless it is properly stowed and you are actually going to or from the job.
