The Victory Knives Pig Sticker is an 18cm sticking knife built for the job its name describes — cleanly bleeding an animal after it has been dropped and hung, whether that is a pig hunter working in the field or someone handling on-farm custom processing. Victory Knives make it in New Zealand in small, quality-controlled batches, using stainless steel developed through their steel partnerships in Germany and Japan. Across the range Victory harden their blades to 54-55 HRC and give them a sub-zero quench at -80°C after hardening, which produces a hard, wear-resistant edge that stands up to repeated use and holds its edge for longer between sharpenings. It is the same standard of knife Victory Knives supplies to major meat and fish processing operations across New Zealand and Australia, so it is built for volume work rather than occasional use. The knife is designed to fit Victory's S6 leather sheath, sold separately, for safe carrying and storage between jobs.
