Lucas Hickory-Smoke Sausage Seasoning Mix is a spice and curing blend that gives home-made sausages a proper smoke-flavoured edge without lighting an actual smoker. The warm hickory aroma is balanced against classic British sausage spicing, so it reads as a smoky banger rather than anything overpowering — a natural way to use up the season's venison or pheasant alongside ordinary pork. This is a seasoning, not a complete mix, so you add your own yeastless rusk and salt to the mince to build the finished sausage; the blend handles the flavour while you control the texture and bind. The 227g pack is pre-measured for typical home and small-batch runs of around 5–10 lb (roughly 2.5–4.5kg) of meat, which suits a stalker or rough-shooter working up a batch from the larder. Once minced and seasoned, fill your skins and link as usual.
