Lucas's gluten-free sausage mix lets you make proper sausages at home without rusk or any wheat-based binder. Lucas have been making ingredients for butchers since 1926, and here they blend the seasoning with rice flour so one mix does the job of seasoning and binder together — the result is suitable for coeliacs and anyone with a wheat intolerance, with no loss of flavour or texture. The method is straightforward: mince your meat, mix the seasoning through evenly, work in cold water and fill into hog, sheep or collagen casings. Lucas's own recipe guidance uses the mix at roughly one part mix to six parts meat, with cold water added to make the batch up — and to keep the finished sausage gluten free, simply avoid adding rusk or flour during processing. For stalkers and game shooters it is a sound way to turn venison or mixed game trim into sausages the whole family can eat, and it works just as well on pork from the butcher. Keep the pack cool and dry and it stores well between batches.
