Lucas Superbloom Pork Tinted is a butcher's sausage seasoning made by Lucas Ingredients, and it is a sound choice for turning home-reared pork or a glut of wild boar into a proper batch of bangers. It is a light-coloured, strongly flavoured blend, high in nutmeg, mace, coriander, marjoram and ginger, giving a rounded, traditional pork-sausage taste with the colour that the tinted grade is named for. Each 227g sachet works at a 2.5% usage rate, enough to season a 9kg batch alongside roughly 67.5% meat, 10% rusk and 20% iced water. The method is straightforward: mince your meat, mix in the seasoning to distribute it evenly, work in the rusk, then add iced water a little at a time before re-mincing through a 5mm or 8mm plate to set the texture. A coarser plate gives a coarser sausage, and you should keep the mix below 5°C throughout. It is a useful larder staple for anyone making their own game and pork sausages in quantity, and it is also supplied in a larger 15kg tub.
