It carries spice and savoury notes pitched for a traditional beef sausage. To make a batch you add roughly 3.5kg of meat and 1.5kg of pork belly along with a pint of water, then mince, fill your skins and link. For deer stalkers and rough shooters, it is a straightforward way to turn a portion of your own venison or game into properly seasoned bangers in the home larder, without guesswork over rusk-to-meat ratios or seasoning levels.
