Lucas Lincolnshire Sausage Mix is a complete blend of seasoning and rusk for making traditional Lincolnshire-style bangers at home, ideal for turning a deer or game butchery session into a freezer full of sausages. As a free-flowing mix with sage and savoury notes and visual rubbed herbs, it carries the classic herby Lincolnshire character that sets these sausages apart. Because the rusk, seasoning and flavourings are all in the pack, there is no separate measuring of spices: simply combine the mix with roughly 3.5kg of meat, 1.5kg of pork belly and a pint of water, then mince, fill your skins and link. The result is a coarse, well-seasoned sausage that suits venison and wild boar trim as readily as it does pork. It is a practical way to use up the offcuts that come with home processing, giving them a second life as something genuinely worth eating.
