Carbon or stainless? Carbon steel takes a keener edge and is easier to touch up in the field, but it will stain and rust if you put it away wet. Stainless is the low-maintenance choice for a wet larder. Neither is wrong; it depends how disciplined you are about drying a blade.
A reminder on the law: carry a knife only where you have good reason to, and be aware of the rules on blade length and lock type when not in the field.
