Draw the knife through the V-shaped tongues and the guide holds a consistent angle automatically, straightening the cutting edge with each pass. It's ambidextrous, suiting right- and left-handed users without adjustment, and works two ways: held in the hand, with the moulded hand-guard protecting the operator, or mounted on a worktop using the stainless steel bracket supplied.
