Fischer-Bargoin are a French maker of butchery and kitchen cutlery, and most of what is here is larder kit: sharpening steels, a larder saw, and a handful of small knives.
Steels – which one
- Oval steels in 30cm (12in), in fine and extra-fine cut. The oval section puts more steel against the edge per stroke than a round one.
- Diamond steels – the oval diamond steel and the Red Steel 4-rod sharpener. A diamond steel removes metal, so it sharpens; an ordinary steel mostly realigns an edge that is already sharp. Use the diamond when the knife has gone dull, the plain steel to keep it keen while you work.
- Poacher's steel – a 75mm pocket steel for the field.
- Sharp'Easy – a pull-through sharpener, with a bench bracket and replacement bars sold separately.
Larder saw and knives
The 350mm stainless larder saw is a household-pattern bow saw for splitting a carcass, and replacement blades are listed so the frame lasts. The knives are paring, peeling, scallop and oyster knives plus a ham boner – useful kitchen tools rather than field knives.
