The Morakniv Straight Wide Boning Knife is a Swedish-made butchery workhorse built for breaking down game, deer, pig and poultry in the larder. The 153mm blade is made from Sandvik 12C27 stainless steel, hardened by deep refrigeration to 58 HRC, giving it a keen edge that is straightforward to maintain with a steel. The semi-flex profile is the key distinction here — where a stiff blade drives through heavy connective tissue, the semi-flex version follows bone contours more closely, making it particularly effective for finer boning work on haunches, shoulders and fish. The wider blade section provides good surface area for sweeping cuts away from the bone without the narrow blade of a fillet knife.
