The Granton 12-inch Butcher Knife is a full-length professional butchery blade from the Sheffield cutler that gave the Granton edge its name. The distinctive hollow-ground scallops along both sides of the blade create small air pockets between blade and food, reducing drag and preventing slices from sticking as the knife passes through meat — a genuine advantage when working through large joints, carcasses or whole muscles at pace. At 12 inches the blade is long enough to work through a hindquarter in a single draw stroke, keeping cuts clean and reducing tearing. Sheffield manufacture means the steel and grind quality meet the standards the city has built its cutlery reputation on. The Granton edge requires no special maintenance beyond normal honing and sharpening — the scallops are in the flat of the blade, not the cutting edge itself. A sound, practical choice for butchers, game dealers, venison larders and anyone processing their own deer or wild boar.
