The Morakniv Wide Fillet Knife (model 9210PG) is a professional-grade filleting and butchery knife built for demanding food-preparation work. The 210 mm semi-flexible blade is ground from Swedish Sandvik 12C27 stainless steel and hardened by deep refrigeration at -80°C, achieving approximately 58 HRC for an exceptionally keen edge with good corrosion resistance. The semi-flex characteristic gives the blade enough give to follow the contours of fish or carcass without the unpredictability of a fully flexible blade, making it equally capable for boning, skinning and larger filleting tasks. The double-moulded black elastomer handle features a lightly etched surface that maintains a secure grip in wet or greasy conditions — critical when working streamside, at the game larder or in a professional butchery. Total length is approximately 350 mm and weight around 125 g, so the knife sits lightly in the hand for extended work.
