The Fischer Red Steel Diamond is a fast, hand-held knife sharpener from Fischer-Bargoin, the French cutlery maker based in Thiers, supplied here without its stainless steel bench base. Passing the blade through the slot draws it across four rods coated in natural diamond particles, which hold the edge at a constant 30-degree angle and are aggressive enough to restore a genuinely dull or worn knife — where Fischer's non-diamond "Polish" sharpener only maintains an edge that has already been sharpened. That makes it the version to reach for in busy kitchens and catering environments rather than routine mid-shift touch-ups. The body is built from surgical-grade 316L stainless steel and food-safe polypropylene, is fully dismantlable, and can be cleaned at temperatures up to 120°C; Fischer holds NSF certification on the design, confirming it meets the strictest food-hygiene standards.
