Fischer Bargoin's 30 cm (12") round sharpening steel is a honing steel for keeping a knife's edge aligned and working cleanly between proper sharpenings — the everyday tool used at the block or on the game table, not a grinder or stone, and not a knife itself. The rod is fine-cut, hard chrome-plated high-carbon steel, sturdy enough to true up hard European and stainless blades without stripping much metal off the edge. It's fitted with an ergonomic two-material handle — a grey elastomer grip for a secure, non-slip hold paired with a durable coloured plastic section, blue on this steel — so it stays comfortable to use whether hands are wet, cold or gloved. Fischer Bargoin has made professional knives and sharpening steels in Thiers, in central France, since 1859, and this is one of their standard individual steels, sold on its own rather than as part of a set.
