Smith's Caprella 2-Step Knife Sharpener packs a coarse and a fine sharpening stage into a pocket-sized tool. The coarse stage uses two crossed carbide blades preset to a 20-degree angle, and three or four strokes through the slots is enough to bring a genuinely dull edge back in seconds. The fine stage is a pair of crossed ceramic rods, also set to 20 degrees, for touching up a blade that's already sharp rather than starting from scratch.
