The Marttiini Tweezers for Fish Bones (product no. 1514110P) are a purpose-made tool for taking pin bones out of a salmon, trout or other fish fillet cleanly, without wasting flesh. Pin bones run in a line down the centre of a fillet and are too fine and too firmly set to pull with a knife tip, so anglers and cooks reach for a broad, flat-jawed tweezer instead - one that can grip the tip of each bone and draw it out along the grain in a single motion. Marttiini, the long-established Finnish knife maker based in Rovaniemi, has cut the inner face of the jaws with fine grooves, so they hold onto the slippery surface of a wet bone rather than sliding off it, and the tool is shaped to sit comfortably in the hand through repeated use. Made from stainless steel, it rinses clean at the sink and won't pit or rust in a damp kit bag. It's a small, inexpensive addition to a filleting kit for anyone who takes fish from river or loch and wants to serve it bone-free, and it carries Marttiini's 3-year warranty.
