This Lucas Tasty Burger Mix with Onion is a butcher's burger seasoning for turning minced meat into proper homemade burgers, and it earns its place in the game larder when you have venison or other quarry to use up. Lucas Ingredients has supplied British butchers since 1926, and this onion-led blend brings savoury depth and a clean bind to coarse or fine mince. The method is simple: mince your meat, work the mix in evenly, add water gradually until it is absorbed, then re-mince through a 5mm or 8mm plate to set the texture you want. A coarser plate gives a coarser, more rustic burger; a finer one tightens it up. As a rough guide the recipe works to around 10lb of meat with half to one pint of water. It suits venison from the stalking season, wild boar, pork, beef or a mix, letting you control exactly what goes into each burger. Keep processed meat below 5°C and you will get reliably tasty results batch after batch, whether you are filling the freezer after a cull or feeding a barbecue.
