Fischer-Bargoin's oval sharpening steel carries a 27cm (11") diamond-coated working length, supplied individually boxed. Fischer-Bargoin have made professional cutlery and sharpening steels in Thiers, France since 1859, and this steel is built for the same commercial kitchens and butchery counters the maker has long supplied. The oval cross-section presents a broader face to the blade than a round steel, so each stroke covers more of the edge and sharpening comes out more even along the length of the knife — useful on wider or thicker blades as well as narrow ones. Natural diamond particles are set into the rod under a hard chromium coating: rather than simply realigning a turned edge the way a plain steel does, the diamond finish cuts a light amount of metal away, so a genuinely blunt knife comes back faster. The handle is black synthetic, shaped for a secure grip, with a stainless ring for hanging storage. Draw the blade along the full length of the steel at a shallow angle, repeating evenly on both sides, to bring a working edge back between full sharpenings.
