The Fischer Sharp'Easy is a fast, no-training way to keep a knife edge in butchery- or kitchen-ready condition, doing the same job as a traditional sharpening steel without the technique it demands. The hygienic, ultra-strong polypropylene body houses a pair of stainless steel pre-tensioned sharpening bars and a blade guide, so there's no spring mechanism to wear out. Draw the knife through the V-shaped tongues and the guide holds a consistent angle automatically, straightening the cutting edge with each pass. It's ambidextrous, suiting right- and left-handed users without adjustment, and works two ways: held in the hand, with the moulded hand-guard protecting the operator, or mounted on a worktop using the stainless steel bracket supplied. A stainless steel reinforcement at the top of the blade guide stops plastic fragments breaking off into food during repeated use — a detail that matters in a working butchery or kitchen. This yellow-bodied version is part of a colour-coded range, useful for keeping sharpeners segregated by section, and the sharpening bars themselves are replaceable when they eventually wear.
